Recipe: Vegan Banana French Toast
TGIF! We’ve got one thing on our minds heading into the weekend and that is BRUNCH. We couldn’t think of a better way of starting our Saturday than by whipping up a batch of Vegan Banana French Toast. So grab your bestie, sip on some mimosas, and dish your best stories of the week over these delicious bites!
Makes 2 servings
Ingredients:
- 1 mashed banana
- 1 ¼ cups almond milk
- ½ tbsp flaxseed
- ¼ tsp cinnamon
- 4-5 bread slices
- 1-2 tsp almond meal (for texture)
- ½ tsp vanilla extract
- 1 tbsp vegan butter/vegetable oil
Optional Toppings: Sliced banana or other fresh fruit, maple syrup, icing sugar, chocolate chips, coconut, peanut butter
Method:
- Add all ingredients (apart from toppings) into a bowl and whisk until well combined
- Soak each bread slice in the mixture for 2 minutes
- Heat butter/vegetable oil in a fry pan on medium heat
- Cook the soaked bread for 2-3 minutes on each side (or until golden brown)
- Add desired toppings and serve immediately while still warm
