Recipe: 3 Easy Vegan Microwave Meals

Brownie in a Mug
Ingredients:
- ¼ cup flour
- ¼ sugar
- ½ tbsp cocoa powder
- Pinch of salt
- ¼ tsp baking soda
- ¼ water
- ½ tbsp vegetable oil
- ¼ tsp vanilla extract
- ¾ tsp white vinegar
Method:
- Add all dry ingredients to a mug and mix well.
- Add in wet ingredients and mix again
- Microwave for 4-5 minutes
Scrambled Tofu
Ingredients:
- ½ block firm tofu crumbled
- Seasoning (turmeric, black pepper, salt, garlic powder)
- ½ tsp olive oil
- ⅓ cup chopped mushrooms, zucchini, red bell pepper
- Vegan cheese/nutritional yeast
- Sriracha
Method:
- In a mug, mix tofu with seasoning, then olive oil
- Add chopped veggies
- Microwave for 2-3 minutes and top with vegan cheese/nutritional yeast and sriracha
Cherry Granola
Ingredients:
- ½ cup oats
- ¼ cup dessicated coconut
- ¼ cup almonds
- Cinnamon
- ½ tbsp maple syrup
- ½ tbsp almond butter
- Pinch of salt
- Plant-based milk
- 5 cherries, chopped
Method:
- Mix all ingredients apart from milk and cherries in a mug and microwave for 1-2 minutes
- Serve with plant-based milk and cherries
