Recipe: Vegan Peanut Butter Cups

Makes 9 small servings

What better way to celebrate Valentine’s Day than serving up a cup of love… vegan peanut butter cups of love, that is!

  • 1 cup vegan chocolate chips
  • 2 tbsp coconut or other vegetable oil
  • ¼ cup smooth peanut butter
You will also need:

Cupcake liners, cupcake tin

  1. Microwave the chocolate for 1 ½ minutes
  2. Meanwhile, line a cupcake tin with cupcake liners
  3. Add 1 tbsp vegetable oil to the melted chocolate and mix thoroughly. Add 1 small spoonful of this chocolate mixture to each of the cupcake liners and place in the freezer for 10 minutes
  4. Mix the peanut butter with the other teaspoon of vegetable oil
  5. Remove the chocolate from the freezer and add a spoonful of the peanut mixture into each cupcake liner and place back into the freezer for 20 minutes
  6. Add the remaining chocolate mixture to each cupcake liner and refrigerate until firm
