Recipe: 3 Easy Vegan Microwave Meals

Brownie in a Mug

Ingredients:
  • ¼ cup flour
  • ¼ sugar
  • ½ tbsp cocoa powder
  • Pinch of salt
  • ¼ tsp baking soda
  • ¼ water
  • ½ tbsp vegetable oil
  • ¼ tsp vanilla extract
  • ¾ tsp white vinegar
Method:
  1. Add all dry ingredients to a mug and mix well.
  2. Add in wet ingredients and mix again
  3. Microwave for 4-5 minutes

Scrambled Tofu

Ingredients:
  • ½ block firm tofu crumbled
  • Seasoning (turmeric, black pepper, salt, garlic powder)
  • ½ tsp olive oil
  • ⅓ cup chopped mushrooms, zucchini, red bell pepper
  • Vegan cheese/nutritional yeast
  • Sriracha
Method:
  1. In a mug, mix tofu with seasoning, then olive oil
  2. Add chopped veggies
  3. Microwave for 2-3 minutes and top with vegan cheese/nutritional yeast and sriracha

Cherry Granola

Ingredients:
  • ½ cup oats
  • ¼ cup dessicated coconut
  • ¼ cup almonds
  • Cinnamon
  • ½ tbsp maple syrup
  • ½ tbsp almond butter
  • Pinch of salt
  • Plant-based milk
  • 5 cherries, chopped
Method:
    1. Mix all ingredients apart from milk and cherries in a mug and microwave for 1-2 minutes
    2. Serve with plant-based milk and cherries
    Well that was easy!
