Recipe: Vegan Peanut Butter Cups
Makes 9 small servings
What better way to celebrate Valentine’s Day than serving up a cup of love… vegan peanut butter cups of love, that is!
Ingredients:
- 1 cup vegan chocolate chips
- 2 tbsp coconut or other vegetable oil
- ¼ cup smooth peanut butter
You will also need:
Cupcake liners, cupcake tin
Method:
- Microwave the chocolate for 1 ½ minutes
- Meanwhile, line a cupcake tin with cupcake liners
- Add 1 tbsp vegetable oil to the melted chocolate and mix thoroughly. Add 1 small spoonful of this chocolate mixture to each of the cupcake liners and place in the freezer for 10 minutes
- Mix the peanut butter with the other teaspoon of vegetable oil
- Remove the chocolate from the freezer and add a spoonful of the peanut mixture into each cupcake liner and place back into the freezer for 20 minutes
- Add the remaining chocolate mixture to each cupcake liner and refrigerate until firm
