TGIF!  We’ve got one thing on our minds heading into the weekend and that is BRUNCH.  We couldn’t think of a better way of starting our Saturday than by whipping up a batch of Vegan Banana French Toast.  So grab your bestie, sip on some mimosas, and dish your best stories of the week over these delicious bites!

Makes 2 servings

Ingredients:
  • 1 mashed banana
  • 1 ¼ cups almond milk
  • ½  tbsp flaxseed
  • ¼ tsp cinnamon
  • 4-5 bread slices
  • 1-2 tsp almond meal (for texture)
  • ½ tsp vanilla extract
  • 1 tbsp vegan butter/vegetable oil

Optional Toppings: Sliced banana or other fresh fruit, maple syrup, icing sugar, chocolate chips, coconut, peanut butter

Method:
  1. Add all ingredients (apart from toppings) into a bowl and whisk until well combined
  2. Soak each bread slice in the mixture for 2 minutes
  3. Heat butter/vegetable oil in a fry pan on medium heat
  4. Cook the soaked bread for 2-3 minutes on each side (or until golden brown)
  5. Add desired toppings and serve immediately while still warm
